"Ammàno" is a Sicilian white wine produced by Cantine Barbera, a winery based in the Menfi area southwest of the island. The choice of vinification with a maceration on the skins gave the wine a complex profile, dense with perfumes and evolved aromas accompanying the fruit with balsamic and Mediterranean scrub sensations. It is a wine with an artisanal face, with a genuine and straightforward character, which aims to bring the integrity of the grape to the forefront in its entirety, with all its expressive components.
The macerated white wine 'Ammàno' is born in a splendid and sunny area. It is in Contrada Torrenova that Marilena Barbara cultivates some fifteen hectares of vineyard with the vines historically present in the area, mainly Moscato d'Alessandria, Catarratto, Grillo, Insolia, Perricone and Nero d'Avola. The vineyards are managed under organic farming methods, using only sulphur and copper. Vinification processes are conducted with the utmost respect for the grapes' varietal characteristics, without any invasive intervention and with very low use of sulphur dioxide. The company's philosophy is geared towards producing labels with a decided territorial character, reflecting the sunny, Mediterranean climate of the area and Marilena's desire to make direct and full-of personality wines. Cantine Barbera's 'Ammàno' wine is produced according to ancient traditions, with manual destemming of the grapes and crushing using a wooden press. The must ferments spontaneously with indigenous yeasts in oak vats, with maceration on the skins for about a week. In the glass, it has an intense, brilliantly golden yellow colour. The nose expresses scents of orange blossom, ripe yellow fruit, hints of wild herbs from the Mediterranean maquis, and nuances of resin and incense. The taste is ample, rich and long, with a harmonious progression towards a saline, slightly tannic finish and good freshness.
