Gerard Villet's Arbois Savagnin Ouillé is a white wine from Jura, an area in eastern France famous for oxidative-style wines. Specifically, in the production of this Savagnin, ouillage, or the frequent addition of wine into the barrels to compesate the evaporated alcohol, is practiced. The Arbois Savagnin 'Ouillé' of Gerard Villet is a French label whose deep and complex character authentically reflects the character of Arbois wines. The family-run Gerard Villet winery was one of the first to convert to organic farming at the end of the 1980s and today cultivates just over 5 hectares of vineyards on 7 different plots. A large part of these vineyards is dedicated to Savagnin, one of the most important vines in the region, belonging to the Traminer family although it has no aromatic characteristics, unlike its 'cousin' Gewurztraminer.
Gerard Villet Savagnin Arbois 'Ouillé' is a 100% Savagnin from vines grown according to certified organic farming principles on very deep soils consisting of clay, silica and compact marl. Harvesting is carried out entirely by hand and the grapes are then transferred to the cellar for gentle pressing. Alcoholic fermentation takes place spontaneously in steel tanks with the sole help of indigenous yeasts, while ageing takes place in old barriques. While the mass remains in the barrels, the ouillage technique is practised, hence the name 'Ouillé', which consists of topping up the volume of liquid lost through evaporation with the same wine in order to avoid oxidative phenomena.
Gerard Villet's Savagnin Arbois 'Ouillé' has a beautiful, luminous golden yellow colour. The aromatic spectrum is intense and broad, defined by hints of yellow-fleshed fruit, maracuja, honey and dried fruit that blend with distinct mineral notes and balsamic undergrowth nuances. The enveloping softness of the sip is perfectly balanced by the marked freshness and savouriness that describe the very long mineral epilogue.
