With its multifaceted and imposing character, Enzo Boglietti's Barolo 'Fossati' is a red wine suitable for special occasions, first produced by the winery with the 1996 vintage. Fossati's Additional Geographical Mention is shared between the communes of La Morra and Barolo, although the plot owned by the Enzo Boglietti estate is located entirely in La Morra. Here, the soils belong to the Tortonian period while the microclimate is on average warmer, characteristics that result in expressions of greater finesse and vivacity.
Enzo Boglietti Barolo 'Fossati' is a pure Nebbiolo from an east- and southeast-facing vineyard, cultivated following the principles of organic farming and consisting of 30 percent 60-year-old vines and the remainder 15-year-old vines. The vines are located between 370 and 420 meters above sea level and rest on loamy, clayey loamy soils that are sub-alkaline and poor in organic matter. When the clusters have reached the optimal stage of ripeness, manual harvesting, careful selection and destemming and crushing operations are carried out. Alcoholic fermentation of the must takes place at a controlled temperature in contact with the skins for 20 days, accompanied by daily punching down and pumping over. Subsequently, the mass is left for an additional 60 days in post-fermentation maceration and is then racked into French oak barrels for long aging of about 30 months.
The color of Enzo Boglietti's Barolo 'Fossati' is transparent ruby red with a faint orange rim. Articulate and intense aromas of ripe dark fruits, red flowers, herbs and sweet spices emerge from the glass. Fresh and dynamic on the palate, where important tannins and satisfying warmth accompany the lingering spicy finish.
