The Barolo 'Sottocastello di Novello' from Langhe winery Ca' Viola is a classic and austere expression of one of the most celebrated red wines in all of Italy. For Giuseppe Caviola, owner, founder and winemaker of the Ca' Viola winery, this Barolo represents the crowning achievement of a journey that, over the years, has led him to confront the most important grape varieties of the Langhe, a journey that began with Dolcetto and has come all the way to his majesty Nebbiolo. The first vintage produced of Barolo 'Sottocastello di Novello' was in 2006, and from that moment, the bottle took little time to win over fans and critics from all over the world.

Ca' Viola Barolo 'Sottocastello di Novello' is a 100% Nebbiolo from a vineyard of almost 2 hectares located within the commune of Novello and conducted organically. Here, the soils are medium limestone, clayey-sandy in nature, and on them grow vines about 20 years old located at 450 meters above sea level with southern and southeastern exposure. Once in the winery, the clusters are mounded in unglazed concrete tanks for temperature-controlled alcoholic fermentation with a proportion of whole grapes, accompanied by 15-30 days of maceration on the submerged cap skins. The ensuing ageing phase lasts for at least three years, two of which are in large oak barrels and one in cement. The wine is finally placed in bottles without undergoing any filtration operation.

Barolo Ca' Viola 'Sottocastello di Novello' is ruby red in colour, tending to luminous garnet. Deep and austere is the olfactory panorama, described by vast scents of black cherry, rhubarb, cinchona, chocolate and tobacco, enhanced by balsamic and underbrush sensations. The taste progression is elegant, complex and energetic, with soaring freshness and velvety tannic texture characterizing the long and persuasive epilogue.
