The Barsac ‘Cypres de Climens’ is a sweet and enveloping dessert wine, known as the “second wine” of the Bordeaux winery Chateau Climens, a benchmark for the Barsac territory. This label is produced only in select vintages and is appreciated for its greater accessibility compared to its “big brother,” Chateau Climens Barsac 1er Cru, recognized as one of the best sweet wines in the world. While it does not reach the same levels of complexity, the ‘Cypres de Climens’ still retains the refinement and style of the Château, boasting remarkable longevity and a more vibrant character. In fact, the barrels used for the ‘Cypres de Climens’ are chosen at the end of the aging process, meaning that until that point, the wine undergoes the same journey as its “big brother.”
The production of the ‘Cypres de Climens’ Barsac from Chateau Climens relies solely on Sémillon grapes grown under biodynamic practices, certified since 2014. The vineyards are planted on soils consisting of a thin layer of sandy clay rich in iron atop a limestone subsoil. A key element for the wine is the characteristic microclimate of the area, where morning mists are cleared by afternoon sunshine, promoting the development of noble rot on the grapes, which are hand-harvested in multiple passes. In the cellar, fermentation and aging occur in French oak barrels, 30-40% of which are new, where the wine rests for 20-24 months.
The Barsac Chateau Climens ‘Cypres de Climens’ has a brilliant golden yellow color. The nose reveals captivating and intense notes of peach preserves, candied lemon peel, dried flowers, honey, and saffron.
