Spanish bodega Aida i Luis Vinyaters presents 'Bashara', a macerated white wine with nimble and tasty and made in very few copies. The small project Aida i Luis Vinyaters was born in 2018 with Aida Cisnal Roig and Luis Serra Bernabeu, agronomists and oenologists who, after a series of experiences around the world, decided to settle in Jalon, in the province of Alicante. Their cultivation is based on two indigenous varieties: Moscatel and Giró, bred and processed to reflect the identity of Marina Alta's magnificent Mediterranean territory.
Aida i Luis Vinyaters 'Bashara' is made only from Muscatel grapes from vines rooted on predominantly loamy and sandy soils, poor in organic matter, which benefit from the typically Mediterranean climate and the constant presence of sea breezes. The bunches are harvested by hand and then placed in steel vats where alcoholic fermentation takes place, thanks solely to the intervention of the yeasts naturally present on the grapes and in the cellar environment, accompanied by a few days of maceration on the skins. During fermentation, flor yeasts also intervene, producing their characteristic surface veil and enriching the wine's aromas.
In the chalice, the Moscatel 'Bashara' of Aida i Luis Vinyaters expresses a sunny golden yellow colour. Bouquet of character evoking perceptions of exotic fruit, Mediterranean maquis, quince and citrus peel, tempered by marine puffs. The taste is dry, slender, rich, and fresh, characterised by a dynamic and aromatic finish and a fine tannic sensation. An orange wine to be paired with elaborate fish dishes, mature cheeses or even white meat preparations seasoned with aromatic herbs.
