The wine thus presents a particularly harmonious profile from a young age and is appreciated for its straightforward, simple and fragrant character. The rich fruity notes are its stylistic hallmark and are particularly pleasant at the table, where they make for interesting pairings with pasta with meat or game sauces or with roast or spit-roasted white meats.
The 'Métro-Boulot-Beaujo' Beaujolais, produced by Domaine des Canailles, originates in a small family-owned estate located in the south of the region, in the 'Pierres Dorées' Appellation area. The property has been managed organically since 2005 and according to biodynamic practices since 2019. The vineyards cover a total area of 8 hectares and are located at an altitude of 450-550 metres above sea level. The climate is mild and sunny, and the soils are made up of the disintegration of granite rocks, which are very rich in mineral elements. The Gamay vines are approximately 50 years old. At the end of the harvest, whole cluster vinification is carried out with semi-carbonic maceration and the use of only indigenous yeasts. The wine matures for a few months in steel and is bottled without clarification or filtration and with minimal addition of sulphites.

In the goblet, it is a lively, bright ruby red. The bouquet is lively with fragrant aromas of ripe cherries, redcurrants, raspberries, wild strawberries, floral nuances of violets and subtle hints of spice. On the palate, it has a suave and harmonious entry, with fine tannins and a juicy fruity mouthfeel, which accompanies a finish of clear mineral freshness.
