Bianco 'Dedalo' di Franchina e Giarone is a dry and firm white wine made from Trebbiano di Spagna, an unusual grape typical, despite the name, of the Modena area. Lively and lively, understandable given the experience with refermentation that this winery has. The nose reveals yellow flowers, peaches, hints of citrus and slight herbaceous notes on the finish. Franchina and Giarone's Bianco "Dedalo" was born thanks to Luca Pizzetti's territorial enhancement project, which at the Franchina and Giarone estates since 2020 gives life to his wines. The latter is designed to make the most of the Modenese territory, specifically that of Castelvetro di Modena. Man's intervention in the vineyard is minimal in order to preserve the natural stages of development and growth of the plants and grapes, all sealed by love and passion for his work.
The pure Trebbiano di Spagna grapes in Franchina and Giarone's Bianco "Dedalo" come from vineyards in the Modena area's foothills. The climate in this area is typical of the Po Valley, with hot, sultry summers and cold, often wet winters with precipitation that does not meet the water needs of the cultivated land. The soil is compact and composed mainly of clay for wines with a strong and structured character, thanks in part to the virtuous intervention of man who has been able to reconvert this land to make them welcoming to vines. Once the harvest is completed, the June grapes are brought to the winery, where spontaneous alcoholic fermentation takes place in fibreglass tanks. It ages a few months on fine lees before being bottled.
Franchina and Giarone's Bianco "Dedalo" appears to the eye a straw yellow with greenish highlights and a lively and inviting froth. It releases aromas of broom, white-fleshed fruits such as peaches and herbaceous aromas on the finish; in the mouth, the body is structured and lively with a good final freshness that entices drinking. It pairs perfectly with sushi and sashimi, fried fish and light appetizers; also interesting with sliced meats and vegetarian dishes. Perfect for sharing at summer gatherings by the sea at sunset or for light lunches tasting typical Emilian dishes and discovering unique and genuine flavours.
