The Bianco Frizzante Ancestrale 'Metodo Olimpia' from the artisanal winery Cantina Giardino is a bottle of extraordinary pleasantness and drinkability. Within the municipality of Ariano Irpino, in the northern part of Irpinia, Cantina Giardino operates with respect for nature and the land, embracing the principles of organic farming and exclusively cultivating the local grape varieties: Aglianico, Fiano and Greco. Most of the vineyards cultivated by the estate have been recovered from abandonment in an initiative to safeguard and enhance the area's wine-growing heritage. Olimpia, to whom this label pays tribute, is the old lady who loved cultivating the vineyards from which the grapes come.

Metodo Olimpia' Cantina Giardino Bianco Frizzante Ancestrale consists solely of white grapes grown in accordance with the principles of organic farming on clay-rich soils rich in microelements, approximately 350 metres above sea level. After manual harvesting, the bunches are mellowed for spontaneous alcoholic fermentation, accompanied by brief contact between the must and skins. Refermentation occurs in the bottle thanks to adding frozen flower must, according to the Ancestral Method. The liquid is not subjected to any stabilisation, clarification or filtration operations throughout the process.

The Bianco Macerato Frizzante Ancestrale Cantina Giardino 'Olimpia Method' is a slightly cloudy orange-yellow colour with lively, fine mousse. The nose offers hints of ripe yellow fruit, citrus peel and dried flowers, combined with light perceptions of resin and earth. Fragrant, graceful and flowing taste progression, delineated by marked freshness and vivacity. An ancestral method of remarkable authenticity and purity, capable of bringing joy to convivial aperitifs.
