Sa Defenza's Bianco 'Sacava sulle Bucce' is an orange-style wine, produced by a Sardinian winery that is always able to impress with its indigenous varieties. 'Sa Cava' means 'the quarry' in Sardinian, a tribute to the mining activity that was very common near the winery in the past. Production follows minimal intervention and the white grapes follow a long maceration process that helps to strengthen this full-bodied wine. WHITE 'SACAVA SULLE BUCCE' SA DEFENZA DESCRIPTION

The white 'Sacava sulle Bucce' from the Sardinian winery Sa Defenza is an orange wine of great intensity and structure produced through a pellicular maceration of about three weeks. Pietro, Paolo and Anna Marchi, siblings at the helm of the artisanal winery Sa Defenza, operate in the territory of Donori, some thirty kilometres north of Cagliari, an area that the Marchi intend to enhance and preserve at the same time. The choice of the name 'Sa Defenza', an expression of the Sardinian language meaning 'the defence', is no coincidence.

Sacava sulle Bucce' Sa Defenza Bianco comes from a single white grape variety cultivated on granitic-sandy soils located at an altitude of 150 metres above sea level with full southern exposure. The agronomic management excludes the use of synthetic chemical products, in favour of copper and sulphur for plant protection and organic substances for fertilisation. Harvesting is carried out by hand in crates and is followed by mashing of the destemmed and crushed grapes in stainless steel tanks. Here, alcoholic fermentation occurs spontaneously through the action of indigenous yeasts alone, combined with approximately 3 weeks of maceration on the skins at a temperature of 21 °C. Invasive clarification and filtration operations are banned throughout the entire process.

The colour of the 'Sacava sulle Bucce' Bianco Sa Defenza is a beautiful intense amber. The olfactory texture is woven from vivid sensations of ripe apricot, citrus peel, broom and Mediterranean scrub, enhanced by iodised mineral memories. The palate is striking for its warmth, power and structure, elements well supported by the pleasant freshness, light tannin and marked savouriness. On the finish of lasting persistence, the notes of ripe fruit and iodine previously perceived on the nose return.
