Cartizze Extra Dry "DDD" from the Duca di Dolle winery in Veneto is a fresh, sparkling wine suitable for an aperitif with friends. The Glera grapes are harvested by hand from one hectare of the winery's vineyard in Santo Stefano di Valdobbiadene and then re-fermented using the Charmat method. Prosecco Cartizze Extra Dry "DDD" Duca di Dolle comes from vines that are about 70 years old, cultivated in a one-hectare plot on the steep hillsides of Santo Stefano di Valdobbiadene. The sunny exposure facing south always guarantees excellent ripening of the grapes. The particularly valuable calcareous soils allow the Glera to express itself at the highest qualitative levels, with clear finesse and elegance. Manual harvesting takes place towards the end of September and the best bunches are chilled and brought to the cellar to undergo delicate pressing. The first-pressing must ferments in temperature-controlled stainless steel vats and the base wine is transferred to an autoclave for frothing and re-fermentation according to the Martinotti or Charmat Method.
