CAVA BRUT NATURE 'AZIMUT' SURIOL 2022 DESCRIPTION

The Cava Brut Nature 'Azimut' from the Catalan artisanal producer Can Suriol is a sparkling wine with a joyful and carefree character, the result of an ambitious project centered around environmental sustainability. In fact, with the 'Azimut' line, the Suriol family has set out to promote organic farming in the Penedès region by working with grapes provided by local vine growers who do not use any synthetic chemical products, sharing the proceeds and thus encouraging conscientious agriculture.

'Azimut' Can Suriol Cava Brut Nature originates from a blend of Macabeu, Xarel-lo, and Parellada grapes grown according to the principles of organic farming, without the use of synthetic chemical products. Specifically, the grapes come from various areas of the Penedès, cultivated by families of vine growers distributed along the coast, in the central area, and in the mountains. In the cellar, the base sparkling wine is produced through spontaneous alcoholic fermentation of the must in cement tanks, followed by a brief rest before bottle fermentation according to the Traditional Method. Aging on the lees in the bottle lasts for 9 months, and throughout the entire process, the wine undergoes no filtration or physical treatments, while the use of additives is excluded, except for very low doses of sulfites, necessary to protect the wine.

The Cava 'Azimut' Brut Nature from Can Suriol has a light straw yellow color with a lively and persistent bubble. The aroma reveals pleasant notes of pear, chamomile flower, grapefruit, and toasted almond, while on the palate, it is fresh, full-bodied, and energetic, with a savory and rustic finish where the sensations perceived on the nose reappear.
