CHABLIS MARCHAND-TAWSE 2022 DESCRIPTION

The Chablis of Marchand-Tawse represents an expression of the prized Chablis area that echoes the freshness and minerality typical of the terroir. Marchand-Tawse is a so-called Maison de Négoce, an expression that identifies wineries dedicated to the vinification and marketing on their own account of grapes purchased from trusted winegrowers. This activity is widespread in prestigious wine-growing areas of France, such as Burgundy and Champagne. While in the latter area the phenomenon is to be found in the ancient and glorious tradition of certain Maisons, which since the 19th century have written an important chapter in the world's oenological history, in Burgundy the négoce activity is more of a necessity due to the price and the considerable fragmentation of the vineyards.

Marchand-Tawse Chablis originates from only Chardonnay grapes grown according to organic farming principles on Kimmeridge soils rich in clay and marine fossils. In the cellar, the grapes are processed through gentle pressing and alcoholic fermentation of the must in stainless steel tanks, with malolactic fermentation also taking place completely. Maturation still takes place in stainless steel and lasts 8 months, spent entirely on the fine lees without recourse to the practice of bâtonnage. The final bottling is then carried out without any clarification or filtration.

To the eye, Marchand-Tawse Chablis reveals a pale straw yellow colour. The aromatic bouquet reveals aromas of white-fleshed fruit and citrus fruits, enriched by light perceptions of butter, pleasant herbaceous hints and mineral hints of iodine. On the palate, it stands out for its freshness and elegance, as well as for its good body that gives a rounded sensation to the progression, which is soon lashed by the energetic sapid-mineral component.
