De Sousa's Extra Brut Grand Cru "3A" Champagne is a classic method of great depth and breadth, made with grapes from some of the region's most vocated communes such as Avize, Ay and Ambonnay. Among the region's most talented Recoltèe Manipulants, one cannot fail to mention Eric De Sousa, owner of 11 hectares located among some of Champagne's most prestigious parcels, and a staunch advocate of biodynamics, adopted with the intention of preserving the vitality of soil and vineyard so that spontaneous alcoholic fermentations continue in the cellar. All processes carried out in a sartorial manner allow the production of liquids that are original but enhance the expressiveness of each cru of origin. Masterpieces in liquid form.

Champagne Grand Cru "3A" is made from an equal blend of Chardonnay and Pinot Noir, with grapes from the old vines from the three Grand Crus of Avize (Chardonnay), Ay (Pinot Noir) and Ambonnay (Pinot Noir). In the vineyard, the biodynamic regime is firmly adopted, excluding the use of any chemical or synthetic substances and helping with copper, sulfur and natural preparations. In the cellar, separate spontaneous fermentations (Chardonnay in barrique, Pinot Noir in cement) and refermentation in the bottle according to the champenoise method are continued. Ageing lasts at least 36 months on the lees.

Champagne Grand Cru Extra Brut "3A" presents itself in the glass with a bright and intense golden yellow colour and extremely fine perlage. The aromatic range is very broad and refined, characterized by lashings of citrus, dried fruit, white flowers and light toasting, joining complexity and freshness. The tasting does not disappoint expectations, revealing a rich but rhythmic liquid marked by a classy saline texture. A splendid bottle for the whole meal, as it is capable of accompanying preparations of a certain weight.
