The three grape varieties are vinified separately and parcelled in white. The clusters are gently pressed and the must ferments in temperature-controlled steel tanks. After a few months of aging, the vins clairs of the vintage are blended, adding about 45% of reserve wines, which give complexity and maturity to the cuvée. The second fermentation takes place in the bottle according to the Champagne method, with a sur lattes resting of at least 48 months before disgorgement.
