Jean Hû's Brut "Didascalie" Champagne was born in the southernmost part of the Champagne Region in a small-scale village whose name is Vincelles. The Hû family winery took its first steps in the second post-war period, precisely in 1948 when the first plots of land were purchased for the growth of an excellent raw material. From generation to generation, the passion and experience for production has been passed down: in the 1970s Christian Hû took over the business, intervening with structural remodeling work and the introduction of new cellar equipment, and today his daughter Aurélie has taken over the entire winery, leading its work towards preservation and improvement for a sustainable future of the winery.
The Pinot Meunier, Chardonnay and Pinot Noir grapes in Jean Hû's Champagne Brut "Didascalie" are grown on soils primarily composed of clay and limestone for a unique structure and character. The vineyards are south-facing, which allows excellent ripening of the grapes before harvest. Human intervention in the vineyard is controlled and calibrated according to the season to try to keep the vines lush and productive: in winter, careful and targeted pruning is carried out so that in spring the shoots can grow strong and healthy again; in summer, exposure of the clusters is carried out thanks to the aeration of the foliage to complete the growth cycle of the grapes. In the winery, an alcoholic fermentation takes place in steel and a second fermentation in the bottle according to the dictates of the Champenoise Method.
The color of Jean Hû's Champagne Brut "Didascalie" is straw yellow with intense golden reflections; the aromas are reminiscent of red fruits along with the fragrant notes of freshly baked bread typical of this process. The palate reveals fine perlage and persistence along with excellent creaminess and balance with a long and pleasant finish. Excellent paired with grilled cooked fish, sushi, sashimi and smoked fish; also interesting with seasonal vegetable dishes.
