The Grand Cru has always been considered among the absolute best for growing Pinot Noir, which matures giving wines of remarkable complexity and elegance. The long aging on the lees encourages the development of a rich palette of tertiary aromas, which enhance its charm and expressive depth.
Brut Grand Cru is a Champagne born in one of the most famous terroirs in the entire region. Maison Georges Vesselle cultivates a domaine of 17 hectares divided into several parcels located in well-sunlit, hillside positions, which are located near the small village of Bouzy. Following the tradition and style typical of the great Champagnes of the area, the cuvée is composed of Pinot Noir and a small percentage of Chardonnay. The vines are about 15 years old and are cultivated on limestone-clay soils that are particularly suited to red grapes. The two varieties are vinified separately. Soft pressing of the grapes is followed by fermentation in temperature-controlled stainless steel tanks. A variable percentage of reserve wines from the previous 2 or 3 vintages is added to the wines of the vintage in order to achieve the right harmony and expressive maturity. Secondary fermentation takes place in the bottle according to the Champenoise Method, with a stay sur lattes of about 55 months in the maison's cellars dug into the chalk.
