Fermentation takes place with indigenous yeasts and the base wines rest for several months in oak barrels before the final blend is created. Secondary fermentation takes place in the bottle, according to the Champenoise Method and with a 24-month soak in lattes. The Champagne has a luminous and brilliant straw yellow colour, crossed by a fine and continuous perlage. The bouquet is elegant, with scents of dried flowers, aromas of candied citrus peel, yellow fruit, peach, hints of toast, softness of caramel and hints of dried fruit. The palate is broad, long and creamy, with complex aromas and a finish characterised by mineral notes and lively freshness.
