CHAMPAGNE EXTRA BRUT 'BOLERO' FLEURY 2008 DESCRIPTION

The Champagne Extra Brut "Bolero" from the Fleury cellar is a wine of great personality and character made from pure Pinot Noir grapes, cultivated and harvested in the Aube district in the southern part of the Champagne region. The Fleury cellar, a historic winery in the area that for several years has been following the dictates of biodynamic agriculture, striving to limit interventions in the vineyard and cellar to a minimum, is run by the family with great environmental sensitivity. The 'Bolero' is one of the line's most prestigious Champagnes, reaching maturity after several years in the bottle. A creamy and intense bubble, authentic and artisanal, which is difficult to forget.

Fleury's Extra Brut 'Bolero' is made from hand-picked and carefully selected grapes, pressed manually with a vertical press and then fermented half in enamelled steel vats and half in oak barrels to obtain the base wine. Once the first fermentation is complete, the wine is bottled with the addition of liqueur de tirage and a second fermentation in the bottle according to the Metodo Classico or Champenoise method. During this period, this sought-after excellence rests in the bottle for a good 9 years on its lees. This is followed by disgorgement and dosage with the addition of liqueur d'expedition, a recipe secretly guarded by each Maison.

"Bolero" Fleury has a brilliant yellow colour with golden hues, furrowed by a very fine and very persistent perlage. The nose is characterised by hints of ripe yellow fruit, dried fruit, white flowers, honey and brioche bread. In the mouth it is rich and powerful, endowed with good minerality and freshness. The sip finish is long and very persistent, with a perfect balance between sugar dosage and acidity. A bubble with great personality, synonymous with majesty and elegance.
