CHAMPAGNE EXTRA BRUT GRAND CRU 'MIXOLYDIEN 45' STEPHANE REGNAULT DESCRIPTION

French producer Stephane Regnault presents the Extra Brut Grand Cru Champagne 'Mixolydien 45', a bubbly with a fine and balanced soul that reflects the characteristics of the Grand Cru village to which it belongs: Oger. The name 'Mixolydien' is a tribute to modal jazz, another strong passion of Stephane's, while the numerical abbreviation that follows indicates the sum of the vintages that go to make up the Champagne. For example, the number 45 comes from the sum of the '14, '15 and '16 vintages, where 2016 represents the vintage of the sparkling wine base while 2014 and 2015 are the vin de reserve vintages.
Stephane Regnault Champagne Grand Cru 'Mixolydien 45' Extra Brut is made from only Chardonnay grapes from the lieu-dit Le Moulin, located within the Grand Cru village of Oger. The soil is rich in chalk and the agronomic management applied by Stephane is highly sustainable. Following the harvest, the grapes are subjected to a soft pressing, followed by alcoholic and malolactic fermentation in barrels thanks to the action of yeasts and indigenous lactic bacteria respectively. The liquid is then topped up with 35% vin de reserve before being mousseed in the bottle according to the Champenoise Method, with at least 36 months of maturation sur lie in glass. Finally, after degorgement, the wine is dosed Extra Brut.
The colour of Stephane Regnault's Champagne 'Mixolydien 45' Grand Cru Extra Brut is straw yellow with a fine and elegant perlage. The range of aromas ranges from nashi pear, lemon peel, white flowers, bread crust and chantilly cream, with a vivid mineral sensation in the background. The palate is soft and fresh, with a nice savoury streak guiding the lasting finish consistent with the sensations on the nose.
