A sophisticated and refreshing sparkling wine, in which aromatic notes of yellow-fleshed fruit and white flowers are well balanced by refreshing hints of lemon zest and soft almond notes, which peep through on the lingering but delicate finish. Champagne Extra-Brut "Cuvée Perpetuelle" is the signature cuvée of Bonnet-Ponson, the one that best represents the style of the House and the character of the terroir. It is a blend of the three symbolic Champagne grape varieties: Pinot Noir gives structure, Chardonnay refined elegance and Meunier fruity pleasantness. A perfect balance that is reflected in a harmonious and rich sip, also thanks to the use of the Riserve Perpetuelle jealously guarded in Maison's cellars. It is a Champagne with an artisan's face, crafted with care and passion, thanks to an age-old savoir-faire and high-quality raw materials.

The Extra-Brut Champagne 'Cuvée Perpetuelle' of the Maison Bonnet-Ponson, is the fruit of the experience of a small estate based in Chamery, in the Montagne de Reims area. The estate is divided into about fifty small plots, covering a total area of about 10 hectares. It is a classic cuvée composed of almost equal proportions of Pinot Noir, Chardonnay and Meunier. The grapes come from 35 plots classified as Premier Cru, located in the communal territories of Chamery, Vrigny and Coulommes la Montagne. The vines are 35 years old and are cultivated on valuable limestone-clay soils with sand and silt components. Fermentation takes place on a parcel-by-parcel basis, mostly in stainless steel and a small percentage in oak barrels. The base wines are matured for 8 months, also carrying out malolactic fermentation, and at the time of the final blending, are supplemented with a 40% reserve wine. The second fermentation takes place in the bottle according to the Champenoise Method, with a minimum of 4 years of rest on the lattes.

Bonnet-Ponson's "Cuvée Perpetuelle" Champagne Extra-Brut is a label dedicated to lovers of vigneron Champagnes, which expresses in a direct and transparent manner the particular characteristics of the place of origin of the grapes. To the eye, it has a brilliant straw yellow colour, crossed by a luminous perlage, fine and very persistent. The bouquet opens on delicate floral notes, hints of citrus peel, lime, aromas of yellow-fleshed fruit, Mirabelle plum, candied fruit, hints of bread crust and dried fruit. The palate is broad and persuasive, with ripe fruit, good complexity and a very fresh finish.
