It is, in fact, a French bubbly that, from the first moments, strikes for its fruity soul on the nose, prelude to a dry, fine and enveloping sip. Champagne Extra Brut Blanc de Noirs "Les Maillons" is made by the Ulysse Collin winery from the pure grapes of a great international grape variety, Pinot Noir. The vines of this variety are over fifty years old and grow in the parcel that gives the label its name, Les Maillons, located in the commune of Barbonne-Feynel. The grapes, carefully selected during the harvest, alcoholically ferment in barrels thanks to the presence of indigenous yeasts, also carrying out malolactic fermentation for a duration of 3-6 months. Refermentation takes place in the bottle, following the production dictates of the Champenoise Method, and the wine remains refined on the lees for 24 months. At the end of this period, dosage and disgorgement operations are carried out without filtering or collaging.
Blanc de Noirs "Les Maillons" is an Extra Brut Champagne that, in the glass, announces itself with a golden colour, with a slight reflection tending to coppery in the rim. The perlage presents a fine and subtle grain endowed with good persistence. The nose is dominated by important red fruit sensations, very enveloping and intense. In the mouth, it is full-bodied, with a definitely dry mouthfeel, ending with a finish marked by a mineral aftertaste. A signature label from the Ulysse Collin winery that is well suited to accompany raw fish, making for a very classy pairing.
