Champagne Rosé Extra Brut "Dom Ruinart" 2007 Magnum from Ruinart, in a wooden box, is a true icon of this historic Maison, which has marked the history and success of Champagne around the world since the beginning of the 18th century. This flagship cuvée is made from a majority proportion of Chardonnay, sourced mainly from the Grand Cru of the Côte des Blancs: Avize, Chouilly, Le Mesnil-sur-Oger, Oger and the terroirs of Sillery and Verzenay in the Montagne de Reims; while the Pinot Noir comes from the Grand Cru d'Aÿ. As is customary, vinification takes place separately for each grape variety and individual parcel. After fermentation in temperature-controlled steel tanks, the base wines are matured for a few months, also carrying out malolactic fermentation. At the time of blending, in accordance with tradition, a small percentage of Pinot Noir vinified in red is also added. The second fermentation takes place in the bottle according to the Champenoise method, with a minimum of 10 years of maturation sur lattes.
