CHAMPAGNE ROSÉ BRUT GRAND CRU BOEVER A&S DESCRIPTION

Pierre Boever's Champagne Rosé is an elegant and seductive Brut, which comes from the only plots classified as Grand Cru. The estate is located north of Epernay, in the famous Montagne de Reims area. The bouquet opens on floral scents, aromas of small berries, the sip expresses a great balance between the richness of the fruit and the pleasant freshness at the end. This is a Champagne with a gastronomic vocation, with good structure and persistence, perfect to accompany shellfish stews or seafood first courses with tomatoes.

Pierre Boever's Brut Rosé Champagne is made from grapes grown in the vineyards of the communes of Louvois, Bouzy and Ay, all classified as Grand Cru. The various plots on the estate, which covers a total of 5 hectares, are located at an average altitude of about 300 metres above sea level, on calcareous-clayey soils. The grapes are harvested by hand and fermentation takes place separately for the Pinot Noir and Chardonnay, using steel vats. The 'vins clairs' rest for several months in steel, carrying out malolactic fermentation also. The cuvée is then created, based on an assemblage of Pinot Noir (80%) and Chardonnay (20%). Refermentation and second fermentation take place in the bottle according to the Champenoise Method.

The Champagne Rosé Brut Grand Cru, from the small family-run Maison Pierre Boever, represents the French tradition very well. The high proportion of Pinot Noir in the assemblage gives the wine the important structure of Rosé Champagnes from the Montagne de Reims area. In the glass it has a salmon-pink colour, with fine and very persistent perlage. The olfactory profile expresses delicate floral notes, aromas of currants, wild strawberries and other small red fruits. The palate has good body, with persuasive and soft fruit, well balanced by lively freshness.
