The Champagne Rosé Extra Brut 'Le Rosé' from the renowned Maison Billecart-Salmon is a Champagne that stands out for its precise and refined style, reflecting the winery's prestigious savoir-faire. The Maison 's foundation dates back to 1818, when Nicolas François Billecart and Elisabeth Salmon began the glorious history of the house in their home village of Mareuil-sur-Aÿ. The contribution of Jean Roland-Billecart was then fundamental, who in the 1970s decisively focused on the development of a great Champagne Rosé, a type that until then had been considered second-rate.
For the production of Champagne Billecart-Salmon 'Le Rosé' Extra Brut Rosé, a blend of Chardonnay (40%) from different crus in the Vallée de la Marne, Pinot Noir (30%) from the Montagne de Reims and the Vallée de la Marne, and Meunier (30%) grown in the Vallée de la Marne and the Coteaux Sud d'Epernay is used. The grapes are vinified in stainless steel tanks, in red for the Pinot Noir, with complete malolactic fermentation, while for the preparation of the sparkling wine base, 40% vin de reserve is added to the vintage wine. The re-fermentation takes place in the bottle according to the Champenoise Method, combined with at least 36 months of maturation sur lies, at the end of which the degorgement and dosage is carried out as Extra Brut.
Champagne 'Le Rosé' Extra Brut Rosé from Billecart-Salmon presents itself in the glass with a pale pink colour with delicate orange reflections and fine perlage. The nose is a succession of fine notes of cherry, currant, violet, orange peel and subtle hints of almond on the finish. In the mouth, it is creamy, intense and well-balanced, with a fresh, precise development that rests on an elegant finish.
