The "Caparsino" is a Chianti Classico Riserva of great typicality and spontaneity, aged for one year in oak barrels. The nose is expressed on notes of ripe red fruit, gentle aromas of spices, rustic and bucolic aromas that recall the earth. At the sip it has a rich and pulpy texture, of snappy dynamism and good freshness, with a tannic grip that generates a pleasant astringency.
The "Caparsino" Chianti Classico Riserva Caparsa is a crisp and rich red wine, a true expression of the Chianti area. Caparsa is a family-run business located in Radda in Chianti, a famous sub-zone of Chianti Classico at the top of the appellation. Here, the enchanting hills are criss-crossed by orderly rows of vines surrounded by lush woods, in a context of harmony and biodiversity. Founded in 1965 with Reginaldo Cianferoni, the estate is now managed by his son Paolo together with his family who, with scrupulous attention in the vineyard and minimal interventionism in the cellar, produce in full respect of the ancient and historical tradition of the territory. The label depicts an amusing scene of a man drinking from the traditional Chianti 'fiasco'.
Chianti Classico "Caparsino" Riserva di Caparsa is made exclusively from Sangiovese grapes, cultivated at 450 metres above sea level according to certified organic farming principles. After harvesting, carried out entirely by hand, alcoholic fermentation takes place in cement with the help of indigenous yeasts only. The use of cement vats as containers for vinification is a very old practice that favours spontaneous fermentation thanks to the insulation carried out and the natural porosity of the wine container. Maturation then takes place for 12 months in 18-hectolitre oak casks of various types, followed by a long period of bottle ageing.
To the eye, Caparsa Chianti Classico Riserva "Caparsino" reveals a ruby red colour tending towards garnet. The olfactory spectrum is defined by complex hints of black and red fruits, violet, almond and aromatic herbs. The taste is characterised by richness and structure, well balanced by crisp freshness and vigorous tannin. A great Chianti Classico to pair with hearty meat dishes.
