The Chorey-les-Beaune from the Burgundy winery Domaine Cauvard is a red wine with a soft and juicy taste, offering sublime pleasure. The commune of Chorey-lès-Beaune is located in the Côte de Beaune, a prestigious sub-region of the Côte d’Or, situated just 4 kilometers north of the city of Beaune. The Chorey-les-Beaune appellation is predominantly dedicated to Pinot Noir, which represents over 90% of the area's total production and typically yields fresh and accessible expressions here.

Domaine Cauvard Chorey-les-Beaune is made from 100% Pinot Noir, grown on clay and limestone soils using a rational farming approach, a production method aimed at a judicious use of phytosanitary treatments. After the harvest, which is carried out exclusively by hand, the grapes are crushed in stainless steel tanks for alcoholic fermentation at controlled temperatures, accompanied by a variable period of maceration on the skins. This is followed by the complete malolactic fermentation and then aging for several months in French oak barrels. The wine is finally bottled without prior filtration, so the presence of sediments after a few years is absolutely natural.

Domaine Cauvard's Chorey-les-Beaune has an intense ruby red color and enticing aromas of raspberry, black cherry, black currant, licorice, mushroom, and forest floor on the nose. On the palate, it is fresh and soft, tasty and fairly light, with a soft tannic structure leading to a clear fruity persistence on the finish. This Burgundy Pinot Noir can be enjoyed young after adequate oxygenation or several years after the harvest.
