Tenuta Aquilaia's Ciliegiolo is a wine that tells centuries of history and tradition, cultivated with dedication in the heart of the Tuscan Maremma, in Scansano. This variety, already appreciated by the Etruscans more than two thousand years ago, stands out for its intensity and roundness, and Tenuta Aquilaia, a master in interpreting ancient native vines in a modern key, offers us a Ciliegiolo of great harmony that embodies the soul and taste of this generous land. The 'Auspici' line, of which this label is a part, is distinguished by the use of selected grapes, cultivated with respect for tradition and the environment, harvested by hand and left to age in both wood and bottle, testifying to the constant commitment to guaranteeing the highest quality and authenticity of the product.

Ciliegiolo Tenuta Aquilaia reflects the magical encounter between terroir, vineyard and craftsmanship. The grapes undergo fermentation at a controlled temperature of 26°C with maceration on the skins for 15 days. Immediately after alcoholic fermentation, malolactic fermentation takes place, which contributes to the complexity and roundness of the wine. Ageing takes place in stainless steel tanks for a period of eight months, allowing the wine to gradually develop its structure and distinctive character. The care and attention during all stages of vinification and ageing give the Ciliegiolo a very rich aromatic personality, embodying the authentic essence of the land and wine tradition of the Maremma.

The bouquet of aromas that characterises Tenuta Aquilaia's Ciliegiolo celebrates every nuance of the cherry, starting with notes of morello cherry, passing through hints of sour cherry, all harmoniously interwoven. In the mouth, this wine reveals an elegant and enveloping structure, characterised by a pleasant roundness and a satisfying aromatic persistence. It is ideal with dishes of great complexity and richness, such as pappardella with hare sauce, for example. It is, however, a wine with a vibrant personality that is truly versatile and therefore also perfect for simpler, everyday dishes.
