Domaine Ganevat has greatly contributed to enhancing the wine image of the small Jura region in the eyes of wine enthusiasts worldwide. Savagnin Anne et Jean-Francois Ganevat 'Montferrand' is made from only Savagnin grapes from very old vineyards planted on grey marl and iridescent marl soils. The grapes, cultivated according to the dictates of organic and biodynamic agriculture, are harvested strictly by hand and then immediately transferred to the cellar where they are vinified according to a minimalist approach. With this in mind, alcoholic fermentation is entrusted solely to indigenous yeasts, without the use of any additives or oenological aids and without pellicular maceration. Both vinification and ageing of over 30 months take place in wooden vats and final bottling is carried out without prior filtration or clarification and with no or minimal sulphur additions.
