CREMANT DE LIMOUX NATURE 'TRESOR' NICOLAS THEREZ DESCRIPTION

Nicolas Therez's Crémant de Limoux Nature 'Tresor' is a sparkling wine that represents one of the best of this Languedoc region. In keeping with tradition, it is a Classic Method made with a lower pressure than Champagne, which gives it a more delicate perlage that is soft and discreet. It is particularly appreciated for its clear expressive immediacy, its fresh fragrance and its floral and ripe citrus notes. Its rich fruit always remains in the foreground with respect to the evolutionary sensations resulting from ageing on the lees. It is the ideal bottle to open on informal occasions for an aperitif in the company of friends.

Nature 'Tresor' Crémant de Limoux originates in the domaine of Nicolas Therez, located near the village of Serres in the Haut Vallée de l'Aude. The property of about 35 hectares is characterised by limestone-clay soils and is managed under organic farming methods. The cuvée originates in an area characterised by a cool and breezy climate, influenced by the proximity of the Pyrenees. Due to these particular soil and climate characteristics, the area has always been suited for the cultivation of white varieties such as Chardonnay, Chenin Blanc and for a very demanding red grape variety such as Pinot Noir. The grapes are vinified separately with soft pressing and fermentation in temperature-controlled stainless steel tanks. The base wines are matured for a few months before final blending. The second fermentation takes place in the bottle according to the Metodo Classico, with a minimum of 18 months' bottle-ageing before dégorgement.

The sparkling wine Crémant de Limoux Nature 'Tresor' by Nicolas Therez is a refined and elegant Classic Method that goes very well with light appetisers or first courses with delicate flavours. To the eye, it has a beautiful, bright, straw-yellow colour. On the nose it seduces with aromas of acacia flowers, orange blossom, aromas of lime zest, grapefruit, tobacco peach, golden apple, nuances of hazelnut and toasted nuts. The palate is harmonious and creamy, with rich and intense fruit, supported by a lively freshness that flows into a pleasantly savoury finish
