After manual harvesting, carried out slightly early to enhance the acidic component of the grapes, the bunches undergo gentle pressing, with the resulting must undergoing spontaneous alcoholic fermentation in stainless steel tanks. Subsequently, the wine matures for 12 months in oak demi-muids before being bottled with the addition of liqueur de tirage for refermentation in the bottle according to the Method Classico, with aging on the lees lasting for at least 36 months. Throughout the entire process, the use of clarification and filtration operations is excluded, while sulfite additions are minimal or none.
