The Cremant du Jura ‘La Combe’ Rotalier from the iconic Anne et Jean-François Ganevat winery is a Method Classico sparkling wine with a taut and vibrant palate. Among the extraordinary wines produced by the Ganevat family is this Cremant du Jura, a bubbly that can easily rival with great Champagne Blanc de Blancs, a testament to the skilled oenological versatility of Jean-François.

Anne et Jean-François Ganevat ‘La Combe’ Rotalier Cremant du Jura is a 100% Chardonnay from vines averaging around 50 years old, cultivated in accordance with the principles of organic and biodynamic agriculture on soils with a high concentration of limestone and clay. After manual harvesting, carried out slightly early to enhance the acidic component of the grapes, the bunches undergo gentle pressing, with the resulting must undergoing spontaneous alcoholic fermentation in stainless steel tanks. Subsequently, the wine matures for 12 months in oak demi-muids before being bottled with the addition of liqueur de tirage for refermentation in the bottle according to the Method Classico, with aging on the lees lasting for at least 36 months. Throughout the entire process, the use of clarification and filtration operations is excluded, while sulfite additions are minimal or none. Furthermore, after disgorgement, the sparkling wine is not dosed.

‘La Combe’ Rotalier Anne et Jean-François Ganevat Cremant du Jura has a bright straw yellow color with brilliant reflections and a fine, persistent perlage. Aromas of lemon, green apple, flint, hazelnut, chalk, and walnuts describe the intriguing olfactory range, with delicate bakery notes emerging in the background. The palate is clean and very fresh, characterized by a vibrant progression resting on a mineral finish enhanced by elegant effervescence.
