The “Santo Stefano di Perno” Dolcetto is made from pure grapes of the namesake variety, from a single vineyard, namely the Santo Stefano vineyard located in the Perno hamlet of Monforte d'Alba. In the vineyard, utmost care and attention are given, with a meticulous selection of the grapes, which are hand-harvested. In the winery, the process continues with an alcoholic fermentation with submerged cap for about a week, followed by aging in cement tanks for about 6-8 months before being released to the market a year after the harvest.
