Enosi di Baron di Pauli is a South Tyrolean wine that originates in Caldaro, in the heart of the South Tyrolean Wine Road that runs from Nalles to Salorno. The winery is managed by the Di Pauli family, who have worked these lands for countless years, so much so that the estate was considered the official supplier to the Imperial and Royal Court of Austria-Hungary and the Tsars of Russia. Today, the estate has around 15 hectares of vineyards, divided into two different areas: Arzenhof near Kaltern and Hölf unterà Stein near Tramin. The main aim is to produce wines with a distinct personality, reducing the yields in the vineyard while respecting the natural growth and development phases of the plants and the raw material.
Baron di Pauli's Enosi vineyards are located in Hölf unterà Stein, a hamlet of Tramin, and their altitude is about 500 metres above sea level. The soil is composed of clay and limestone for a very structured and deep end product; the climate is characterised by cold, snowy winters and cool summers with frequent rainfall. The name of the wine "Enosi" comes from the Greek "enosis" meaning union and indicates the union of the potential of the territory and the authentic flavours of this land. The harvest is carried out manually, usually in early September and ends in early October; in the cellar, the grapes are pressed entirely and then fermented in steel. A 12-hour maceration on the skins follows. It matures in steel and large barrels for 6 months and is bottled at the beginning of May.
The colour of Enosi di Baron di Pauli is a bright, intense yellow. The bouquet of aromas is reminiscent of gooseberries, white flowers such as jasmine and ripe exotic fruit in combination with spicy notes; on the palate it is full-bodied, elegant and enveloping with intense freshness on the finish for an interesting drink. In pairing, it is recommended with sushi and sashimi, shellfish and lightly fried foods; also interesting with fresh cheeses for a fine end to a meal. Excellent for enjoying a romantic dinner by the sea in front of a summer sunset and enjoying the rarest flavours of the South Tyrolean land.
