Giovanni Rosso's Etna Bianco is made from Carricante grapes, a white wine with a mineral character typical of wines from the volcano. The grapes ferment at a low temperature for two weeks and, after continuous battonage, the wine is ready for bottling. The nose reveals hints of citrus, floral and typical Mediterranean scents. The sip is fresh and savory as only a wine from Etna can be. An excellent and very typical wine, try it with a seafood risotto or even with a fried fish dishes
The Etna Bianco from the Giovanni Rosso winery is a pure Carricante that stands out for its citrus and floral aromatic profile, as well as its impressive mineral timbre, typical of the appellation. The Etna adventure of the Piedmont-based Giovanni Rosso winery in Serralunga d'Alba began in 2016 with the purchase of the estate located in the hamlet of Solicchiata in the municipality of Castiglione di Sicilia. This was the crowning achievement of Davide Rosso, oenologist and owner of the family winery since 2001. The estate currently has almost 15 hectares in a single plot, located at the foot of the small extinct crater of Contrada Montedolce and planted with the indigenous varieties Nerello Mascalese and Carricante.
Giovanni Rosso's signature Etna Bianco is made exclusively from Carricante grapes grown on volcanic soils at an altitude of between 730 and 750 metres above sea level, with northern and north-eastern exposure. Following the harvest, which is carried out by hand in October, the grapes undergo a soft whole cluster pressing, with the must thus obtained undergoing alcoholic fermentation at low temperature in stainless steel tanks for 15-20 days. Maturation also takes place in stainless steel for about 5 months, spent on the fine lees with periodic weekly batonnage.
On visual examination, Giovanni Rosso's Etna Bianco shows a straw-yellow colour with golden reflections. The aromas range from vivid hints of yellow flowers such as broom to citrus sensations such as chinotto and lemon peel, all alternating with fresh notes of wild fennel. Intense and clean taste development, of great freshness and flavour, with the typical mineral accent accompanying the persistent citrus finish.
