Torre Mora's Etna Rosso 'Cauru' recalls the warmth of Etna's volcanic soil, as its Sicilian name suggests. The Etna Rosso 'Cauru' from the Torre Mora - Piccini winery represents ayoung and fresh expression of the territory, an excellent introduction to the appellation. The appellation 'Cauru' comes from the Sicilian dialect and means 'hot', a reference to the incandescent core of Europe's largest active volcano. In fact, this bottle is intended to best represent the identity of the territory, an area with singular characteristics that has always been highly vocated to the cultivation of vines.
Torre Mora - Piccini 'Cauru' Etna Rosso is the result of a blend of Nerello Mascalese (85%) and Nerello Cappuccio (15%), varieties cultivated on volcanic soils, shallow and very rich in minerals. The vines are located at an altitude of 600-700 metres above sea level and benefit from the significant daily temperature fluctuations that characterise the area. Following the harvest, the grapes are mellowed in stainless steel tanks, containers in which alcoholic fermentation takes place in contact with the skins. Once the fermentation process is complete, the mass is decanted into wooden barrels, containers in which the ageing process of at least 3 months takes place before the final bottling.
To the eye, the 'Cauru' Etna Rosso di Torre Mora - Piccini reveals a dark ruby red colour with excellent transparency. The evocative olfactory context is defined by intense scents of cherry, blackberry, bergamot, pomegranate, violet, rose petals and Mediterranean herbs, enriched by mineral hints and hints of vanilla on the finish. In the mouth, it is clean and energetic, with beautiful freshness and silky tannins that give way to a dry, savoury-mineral finish. This Etna Rosso is the ideal accompaniment to a wide range of dishes, from meats of various types to mature cheeses and first courses with mushrooms.
