The "Faye Bianco" is a white wine dry from the Dolomites, made from Chardonnay grapes and a small percentage of Pinot Bianco grapes, placed at an altitude of 300-700 meters. Bianco Faye is one of the best known white wines from the Pojer e Sandri winery, an innovative winery that has set the standard throughout Trentino. It is made from white Chardonnay grapes supplemented with a small percentage of Pinot Blanc, grown on the hills of Faedo at altitudes varying between 300 and 700 m in the localities of Coveli, Pianezzi and Palai. Harvest after harvest, the best grapes from the vineyard considered ideal in relation to the year are selected: in the case of a cold year, preference is given to the vineyard in the Covili locality, at an altitude of 300 m; in the case of a hot year, preference is given to the vineyards higher up.
Years of experimentation, trials and hard work have led to the development of the best production methods that have consolidated the success of Bianco Faye. The vines are trained to the open Trentino pergola system. In the winery, the must is vinified in small oak barrels, where the wine continues to rest for about 6 months remaining in contact with the yeasts. The production process is crowned by ageing for about two years, first in steel and then in the bottle, after which the wine is put on the market.
Bianco Faye Pojer e Sandri lights up the glass with a beautiful intense straw yellow colour, enlivened by greenish reflections. It speaks to the nose in a varied and complex language of fruit, flowers, vanilla, almonds, hazelnut, hay and smoky hints reminiscent of flint. The taste is dry and pleasant, agile but well-structured and full-bodied, with an aromatic finish that echoes the olfactory impressions. Bianco Faye is a thick white wine, an ideal accompaniment to savoury fish or white meat dishes.
