FICHIMORI TORMARESCA - ANTINORI 2023 DESCRIPTION

Tenuta Tormaresca - Antinori's Fichimori is an Apulian wine that originated in Alto Salento, a land that holds innumerable potential, which has also come to the surface thanks to the Antinori family's investment in the area. The estate symbolizes the tale of a land of sun, sea and scenic beauty: it stretches along the coast, and vineyards create one with the woods and pine forests that slope slowly into the blue sea. From the beginning, the Antinori's working philosophy has been to recover native vines and historical varieties otherwise forgotten to give new prestige to the particularities of the territory: the result has been the production of typical wines of excellent quality and great personality.

Tenuta Tormaresca - Antinori's Fichimori vineyards are located precisely in Maìme di San Pietro Vernotico. The wine takes its name from one of the area's most delicious fruits, the fig, which has a purplish red pulp tending to the black inside. The climate here is Mediterranean: mild winters with frequent rains and sultry, hot, but not overly dry summers. Harvesting is conducted manually; in the winery, the grapes are destemmed and gently crushed. Pre-fermentation maceration occurs for 5 days and is useful for extracting aromas, colour and softer polyphenolic components; alcoholic fermentation is without the skins, and ageing is several months in steel.

To the eye, Tenuta Tormaresca - Antinori's Fichimori is ruby red with a light intense violet hue. The bouquet of aromas is reminiscent of ripe red-fleshed fruit such as strawberry, raspberry and currant with delicate hints of rosehips on the finish; in the mouth, it is fresh, savoury and drinkable with a fruity aftertaste that recalls the drink. In pairing, it is recommended with mixed cold cuts of medium and long seasoning, meat-based appetizers as an aperitif and stewed fish; also perfect with white meats. Excellent for formal aperitifs with co-workers to celebrate company milestones, savouring a product that is the offspring of careful work that respects nature.
