The Franciacorta Extra Brut 'EBB' from the Mosnel winery is a very elegant and delicate, dedicated to the figure of founder Emanuela Barzanò Barboglio. Il Mosnel, founded back in 1836 in Camignone in the province of Brescia, is a family-run business that has now reached its fifth generation. The winery's goal is to produce bubbles in full respect of the territory, which is able to tell the precious sparkling wine side of the region.
The vineyards are mainly south, south/east facing and are divided into fifteen different plots. The soil structure is of morainic origin, with limestone rocks of medium depth. Il Mosnel winery's Extra Brut Franciacorta 'EBB' is a bottle-fermented sparkling wine made from Chardonnay. The grapes, once harvested, reach the winery as quickly as possible and are pressed with a pneumatic press. Vinification begins with the first alcoholic fermentation in small oak barrels to obtain the base wine, which is followed by the prise de mousse or addition of liqueur de tirage. It then rests in a bottle on its own yeasts for about 36 months, after which it is disgorged with extra brut dosage.

The nose has hints of yellow and white stone fruits such as plums and white peaches, floral notes, vanilla and brioche bread.
