Franciacorta Rosé Pas Dosé 'Parosé' is a charming and refined bubbly crafted by the family-run Mosnel sparkling wine estate from a blend of Pinot Noir and Chardonnay. The estate is located within a charming 16th-century hamlet located in Camignone di Passirano, where the first 'Parosé', a name derived from a pun between Pas Dosé and Rosé, saw its beginnings with the 2001 vintage.
Mosnel Franciacorta 'Parosé' Pas Dosé Rosé originates from a blend of Pinot Noir (70%) and Chardonnay (30%); varieties are grown on loose soils of a morainic nature with the presence of medium-deep skeleton. The vines, conducted under a certified organic regime, enjoy an east and southeast exposure. In the winery, the clusters undergo a soft crushing, with the Pinot Noir undergoing a light pellicular maceration. Alcoholic fermentation of the flower must alone take place in French oak barriques, where the wine remains to mature for 6 months before the second fermentation in the bottle, according to the Metodo Classico. After at least 36 months of ageing on the lees, disgorgement and subsequent non-dosage take place, with the bottles being topped up using the same wine.
To the eye, Franciacorta Mosnel Rosé 'Parosé' Pas Dosé has a soft coppery hue with fine and persistent effervescence. The harmonious and elegant aromatic range opens with hints of small red fruits, flowers, pomegranate, tangerine, medicinal herbs and hazelnut. Rich and creamy, dry and enveloping mouthfeel, with tasty savoriness and bright freshness that preclude the lingering, fragrant finish. This is a gastronomic Franciacorta with a refined and articulate style, also endowed with excellent longevity.
