The sparkling wine company Vigneti Cenci presents Franciacorta 'La Capinera' Rosé Brut, a Metodo Classico rosé that stands out for its fresh red fruit aromas. This sparkling wine, named after the blackcap, a small bird that is often found in the vineyard during the warm season, is made using the so-called 'Solouva Method'. This winemaking technique consists of using only the sugars of the grapes in the sparkling process, both in the draught phase and in the dosage. This allows the qualities of the grape varieties grown and the terroir to be enhanced without altering their most authentic attributes, thus following a vision based on expressive purity.

The Brut Rosé Franciacorta Vigneti Cenci 'La Capinera' is a 100% Pinot Noir from vines grown in the Cologne area, on the slope of Monte Orfano, with an excellent south-westerly exposure. The soil on which the grapes grow is composed of an ancient, stepped colluvial on a rocky substratum of conglomerate gravel. In the cellar, the grapes are vinified through a short 24-hour maceration, followed by alcoholic fermentation of the must at a controlled temperature. The sparkling wine base is then bottled with the addition of the draught syrup, composed solely of grape sugars, for re-fermentation in the bottle in accordance with the Metodo Classico. At the end of the period of maturation on the lees, which lasts at least 36 months, disgorging and dosage to Brut is finally carried out, without the use of exogenous sugars.

Vigneti Cenci's Franciacorta Rosé 'La Capinera' Brut has a salmon-pink colour with copper highlights and copious effervescence. The aromas range from fruity notes of blackberry, raspberry, cherry and morello cherry to pleasant hints of pastry and almond. In the mouth it surprises with its gracefulness and momentum thanks to the great tension that describes a very pleasant progression.
