The possibility of relying on grapes from the vineyards of numerous small growers in the area makes it possible to choose and select the best bunches of Pinot Noir to make a Metodo Classico capable of expressing the best characteristics of the fresh, delicate rosés of Franciacorta.
Brut Rosé Ca' dei Pazzi is a Franciacorta made from a selection of Pinot Noir grapes from different plots in the territory. After the harvest, the grapes are softly pressed, with brief contact with the skins to extract a minimum of colour. This is followed by vinification in white of the free-run juice in stainless steel tanks. The base wines rest for a few months and after blending, the second fermentation is carried out in the bottle according to the Metodo Classico, with a rest on the lees for at least 36 months. In the glass it is salmon-pink in colour with brilliant reflections, crossed by a fine and continuous perlage. The bouquet is characterised by hints of citrus, aromas of small berries, hints of bread crust and floral nuances. The palate is broad and rich, expressive and creamy, with lively fresh and savoury notes. An unconventional Franciacorta!
