Bele Casel's 'ColFondo Agricolo' is an artisanal semi-parkling wine that tells the story of this tradition of the Colli Trevigiani. It originates on the Monfumo hill from an agriculture that uses only copper and sulphur. The base wine matures in steel for 8 months before re-fermenting in the bottle, without disgorging. On the nose it surprises with fresh hints of flowers, citrus fruits and pleasant yeasty hints, on the palate the savoury, almost salty profile stands out. The advice is to shake the bottle gently to bring the bottom yeasts, an integral part of its personality, back into suspension
