The 'Vigneto Mariarosa' sparkling wine from the small Veneto winery Ca' dei Zago is a bottle-fermented white of rare smoothness, the result of a truly artisanal production approach. This Metodo Ancestrale born in the Colli Trevigiani comes from a blend of the indigenous grape varieties Glera, Bianchetta, Verdiso and Perera. The former is the famous grape used in the production of Prosecco, while the other varieties were traditionally blended with each other, and precisely with Glera, by local farmers. Through its expressions with an ancestral character, such as the Frizzante 'Vigneto Mariarosa', Ca' dei Zago intends to take up this tradition that has been partly overshadowed by the large Prosecco industry.
Ca' dei Zago Frizzante 'Vigneto Mariarosa' is made from a blend of Glera, Bianchetta Trevigiana, Verdiso and Perera, varieties grown in total harmony with nature without the use of herbicides, pesticides and other synthetic chemicals. The grapes come from vineyards located at approximately 250 metres above sea level, on calcareous-clayey soils. In the cellar, alcoholic fermentation is entrusted exclusively to indigenous yeasts and the mousse takes place in the bottle according to the Ancestral Method, thanks to the presence of natural sugars in the must-wine.
On visual inspection, the 'Vigneto Mariarosa' Frizzante di Ca' dei Zago has a pale straw-yellow hue. Fresh and delicate aromas of lemon peel, flowers and white-fleshed fruit characterise the nose, accompanied by a slight hint of almond. The taste is graceful and suave, refreshing and lively, with a pleasant citrus finish. A sincere and genuine bottle that is at its best when paired with lightly structured dishes such as sushi, fresh cheeses or fish starters.
