The Gewürztraminer "Praepositus" from Abbazia di Novacella is an aromatic white wine that was created by a very old winery. The vineyards are situated at an altitude of around 650 metres, guaranteeing a microclimate that is always cool and allows the grapes to ripen at the right time. Gewürztraminer "Praepositus" from the Abbey of Novacella, was born in one of the oldest wineries in Europe. Within the walls of this marvelous complex of Augustinian monks, wine has been produced since 1142, and even today the Abbey is an important reference point for viticulture in the Eisack Valley. The very cool climate, the altitude of the vineyards, and the noteworthy temperature swings between day and night temperatures have proved ideal for growing the most famous white grape varieties originating in central Europe. Gewürztraminer, in particular, expresses a profile of great territorial recognition, with a fresh and elegant character that makes it an excellent table companion to accompany the spicy and spicy dishes of Asian cuisine.
The Gewürztraminer wine "Praepositus" is one of the most interesting and personality-rich whites from the Abbey of Novacella. The grapes come from a selection of vineyards in the Brixen basin, which, due to their south-facing exposure and the age of the vines, guarantee superior quality grapes every year. They are located at about 650 meters above sea level, an altitude that guarantees a cool climate and slow, balanced ripening. The soils consist of ancient moraine deposits of glacial origin, with abundant presence of quartz, gneiss and mycascists. After harvesting operations are completed, the grapes are softly pressed and the must ferments in stainless steel tanks at a temperature of 17 °C. Before bottling, the wine matures in stainless steel tanks for at least 10 months.
Abbazia di Novacella's Gewürztraminer "Praepositus" is a bottle of extraordinary flavor balance, which manages to combine the grape variety's natural tendency toward opulence with the streamlined profile typical of mountain wines. To the eye it is light yellow in color with light golden reflections. The olfactory profile is rich and exuberant, with floral aromas of rose petals, citrus peel, lime, cedar, grapefruit, aromas of passion fruit, lychee, tropical fruit, peach, apricot, hints of ginger, coriander and soft oriental spices. The sip is persuasive, flowing and aromatic, with ripe fruit and complex aromas crossed by a pleasant savory trail. The finish is pleasantly fresh and mineral.
