"Gibelé" from the Sicilian winery Pellegrino is an intense and aromatic white wine made from Zibibbo grapes, also known as Moscato d'Alessandria. This grape variety has been cultivated in western Sicily and on the island of Pantelleria for centuries. The name refers to the peak of the extinct volcano on the black pearl of the Mediterranean. While Zibibbo grapes were once mainly used to produce sweet wines, they have proven to be very suitable for creating harmonious and rich dry wines, even in the Marsala region. The steel vinification process enhances this ancient variety's characteristic citrus and exotic fruit notes, resulting in a smooth, fresh, and saline sip, particularly well-suited for pairing with seafood dishes. The wine "Gibelé" is one of the most famous whites from the Pellegrino winery, one of the most important wine producers on the island. "Gibelé" from Pellegrino is a Sicilian wine born from grapes cultivated in the province of Trapani. After the harvest, the grapes are gently pressed, and the must is fermented in stainless steel at a controlled temperature. Before bottling, the wine rests for several months in stainless steel tanks. It presents itself with a pale straw-yellow colour. On the nose, it opens with notes of orange blossoms and white flowers, aromatic herbs from the Mediterranean scrubland, and aromas of citrus, peach, yellow fruit, and tropical fruit. The palate is aromatically rich, intense, and harmonious, with a mouthfeel characterized by soft fruit well-balanced by a fresh and saline finish.
