Elena Walch's Kalterersee Classico Superiore 'Per Sé' is a South Tyrolean wine, born of Elena Walch's passion and love for wine production: after giving up her job as an architect, she decided to invest in this sector, dedicating herself entirely to the production of wine of rare quality. In 1985, the actual production began with a few plots of land near Lake Caldaro. The idea that has guided Elena's work over the years, and today that of her two daughters, has always remained that of absolute respect for the natural growth and development phases of the plants, the bunches between the rows and the ecosystem to guarantee a genuine and authentic end product.
The pure Schiava grapes of Elena Walch's Kalterersee Classico Superiore 'Per Sé' grow on a soil predominantly composed of clay, limestone and marlstone, in favour of a final product with a structured character. The altitude is between 300 and 400 metres above sea level and the exposure is ideal, so that the sun's rays reach the vines for a good part of the year. Summers are hot, sunny and characterised by significant temperature swings between day and night, guaranteeing full ripeness to the grapes at harvest time; winters, on the other hand, are snowy, cold and characterised by frosts. Harvesting is carried out manually; alcoholic fermentation takes place on the skins for about 7 days; it matures in steel and Slavonian barrels for a few months and is bottled the spring following the harvest.
To the eye, Elena Walch's Kalterersee Classico Superiore 'Per Sé' appears ruby red with brilliant and intense reflections; the bouquet of aromas is broad and intense: red fruits such as raspberry and currant, wild violet petals and notes of white pepper. In the mouth it is fresh, lively and juicy with good freshness and persistence on the finish for an interesting drink. In pairing, it is excellent with medium-matured cured meats, aged cow's and sheep's milk alpine cheeses; also perfect with roast white meats. Excellent to accompany summer picnics in the mountains with family or lifelong friends, sipping a wine that is the fruit of careful and conscious work.
