LAMBRUSCO ROSSO FRIZZANTE 'AL SCUR' FERRETTI 2021 DESCRIPTION

"Al Scûr", made by the Ferretti Vini winery, represents the absolutely territorial and traditional interpretation of a great classic of the Reggio Emilia plain, namely "dark" Lambrusco vinified with maceration on the skins and made sparkling by an ancestral refermentation on its own yeasts in the bottle. Sisters Denise and Elisa, rediscover a way of working that belongs to their family's heritage and their land, presenting it in its most original guise possible: an authentic red wine that has nothing to do with the industrial productions of recent decades.

"Al Scûr" from the Ferretti Vini cellar is made from a rich blend of Lambrusco grapes, present in varying quantities: Salamino for 25%, Maestri 20%, Grasparossa 15%, Marani 10%, Oliva 8%, Barghi 5% and Foglia Frastagliata for a residual 2%. The blend is completed by the use of 15% Ancellotta, another local variety with characteristic colouring power. The grapes come from a 2011 planting, grown on medium-textured clay soil following the dictates of organic farming. Harvesting is carried out by hand around the last ten days of September, and in the cellar, the grapes are destemmed and macerated on the skins for 3 or 4 days in steel containers at an uncontrolled temperature. After racking, the indigenous yeasts conduct spontaneous fermentation, again in steel, while the effervescence comes from refermentation in the bottle according to the ancestral method. The wine rests on its own yeast for at least 6 months in the bottle and is not disgorged before release.

Poured into the glass, Ferretti Vini's 'Al Scûr' has precisely the visual impact one expects from an authentic and genuine Lambrusco: a purplish red with an impenetrable appearance and generous foam. The aromas focus on fruity notes of cherry and small red berries against the backdrop of the typical vinous scent. Evolution brings a spicy nuance to the bouquet. On the palate, the taste is equally full and fruity, with lively and persistent tannin accompanying pungent and invigorating freshness and effervescence. A red wine of the territory and tradition, to be absolutely accompanied by the characteristic dishes of Reggio Emilia gastronomy: cappelletti, cotechino and mixed boiled meats.
