Le Gamay du Matin' originates in the heart of Lorraine, produced by Vanessa Letort for Du Vin Aux Liens. The vines are located on soils rich in limestone and are currently in conversion to organic. Vinification involves whole cluster maceration, followed by gentle pressing, spontaneous fermentation and then resting in oak barrels that have already 'known' some wine. The result is a slender, fruity red, where notes of red fruits intertwine with hints of black pepper. Le Gamay du Matin' from the artisanal winery Du Vin aux Liens represents a refined interpretation of Gamay from the historical region of Lorraine, the result of a collaboration between Vanessa Letort, the soul of the Du Vin aux Liens project, and the Sons of Wine winery. This Domaine is led by Farid Yahimi, a négociant who works with grapes grown mainly in Alsace, but also in neighbouring Lorraine. The grapes are organically or biodynamically grown and throughout the entire production process Farid does not use sulphites.
Du Vin aux Liens 'Le Gamay du Matin' is a 100% Gamay from vines grown sustainably in the Bulligny area of Lorraine. In particular, the vines have an average age of 30 years and stand on clay-limestone soils. After harvesting, the grapes are mash whole bunches in oak barrels, containers in which spontaneous alcoholic fermentation takes place accompanied by two weeks of maceration on the skins. This is followed by racking and then ageing for 10 months in old oak barrels on the fine lees, with the wine finally being bottled without undergoing any clarification or filtration and without the addition of sulphites.
To the eye, 'Le Gamay du Matin' from Du Vin aux Liens is a light, bright ruby red colour. The bouquet is described by persuasive hints of fresh wild strawberries, cherries in spirit and violets, enriched by spicy notes of black pepper that emerge on the finish. The palate is fresh and savoury, slightly tannic but well structured, with a long aromatic persistence on the finish. This Gamay from Lorraine is an ideal accompaniment to platters of cheeses and cured meats, tasty first courses or roast or grilled meats, especially pork and lamb.
