The white "Monemvmasia" is made from pure Malvasia Istriana grapes, with 5-day maceration in contact with the skins. The resulting delicate orange liquid undergoes spontaneous alcoholic fermentation in steel tanks and is aged for 9 months in concrete vats. The vineyards are located on flat volcanic soils near the Euganean Hills in the municipality of Lozzo Atestino, and are cultivated following the principles of organic farming.
