Marko Fon's Malvazija Istriana is a premium orange wine, which macerates on the skins of this aromatic grape variety for over a day before maturing in stainless steel, a choice made to express the aromatic spectrum in fullness. It offers hints of aromatic herbs, dried flowers, yellow fruit and ripe citrus fruits. The nose develops with breadth and persistence. Marko Fon's Malvazija Istriana is a label that was born in the Slovenian Karst and is able to impress for its tense and dynamic character. We are in Boriano, a small hamlet in the municipality of Comeno on the border with Friuli-Venezia Giulia, a place where Marko is starting a small artisanal production, perpetuating the tradition of his family, which has been dedicated to viticulture for generations. The winemaker's aim is to enhance the truest essence of the land, an aim pursued through an absolutely genuine agronomic and oenological approach.
Malvazija Istriana from Marko Fon's Vinogradi Fon winery originates from pure Malvasia Istriana grapes grown without the use of herbicides, insecticides and chemical fertilisers. The vines stand on calcareous-clayey soil rich in mineral elements, including iron and aluminium oxides, a factor that gives the soil its characteristic red colour. Manual harvesting is followed by spontaneous alcoholic fermentation in stainless steel tanks using only indigenous yeasts and accompanied by 24-48 hours of maceration on the skins. Also in stainless steel, complete malolactic fermentation takes place and maturation lasts about 12 months before final bottling, which is carried out without prior clarification or filtration, with maximum respect for the character of the terroir.
In the glass, the Malvazija Istriana of winemaker Marko Fon displays a beautiful, intense golden yellow colour. The olfactory picture is painted by fascinating scents of orange peel, sage, honey, ginger and dried jasmine, surrounded by a strong iodine mineral timbre. The taste development is very intense, dynamic and vertical, characterised by a taut freshness and a subtle tannic sensation, elements that come together in a savoury and mineral finish, with a long citrus persistence.
